Apple Cinnamon Egg less Pancakes
This recipe is sweet, which makes it perfect for serving with ice cream or clotted cream.
Egg-less pancake ingredients:
1 cup of all-purpose flour
1 tablespoon any white sugar
2 teaspoon of ordinary baking powder
a pinch of salt
2 tablespoons vegetable or lightly flavoured olive oil
1 cup of milk, full fat is best, but skimmed or non-dairy milk is OK too
1 teaspoon ground cinnamon
3 tablespoons of thick applesauce
½ teaspoon vanilla essence
Directions for your egg less pancakes:
Preheat an oiled griddle or pan until hot.
Combine the flour, sugar, baking powder, salt, oil, and milk in a bowl and mix.
Mix in the cinnamon, applesauce, and vanilla until the batter is smooth.
Pour about ¼ cup of the batter onto the hot and pre-greased griddle or pan.
Cook until bubbles form on the surface of the pancake, then flip, and cook the other side until it is golden brown.
Egg-Free Pancakes with a hint of spice
If you fancy a slightly more savoury egg-less pancake, you can change the flavour by adding herbs or spices to the batter mix.
Ingredients for your savoury egg free pancake:
1 cup of sieved flour
2 tablespoons of light brown sugar
2 ½ teaspoons of baking powder
½ teaspoon pumpkin pie spice or if you prefer allspice
¼ teaspoon salt
1 cup fat-free milk or nut milk
2 tablespoons of canola oil or a similar light oil
Maple syrup or honey to taste
In a large bowl, combine the flour with the brown sugar, baking powder, spice, and salt.
In another bowl or jug, combine the milk and oil.
When thoroughly mixed stir this into dry ingredients.
Pour batter by ¼ cupfuls onto a hot griddle that has been pre-coated with cooking spray or melted butter.
Turn each egg free pancake when bubbles form on top.
Cook until the second side is golden brown.
